To answer the valve stem question, I have never used valves unless 0.030" above the spring retainer, regardless of rocker type.
And yes, I have ordered AMC valves (and returned them) and seen valve stems below the spring retainer. Comp has disappointed me a couple of times on new, but they exchange and I get +0.050" on the same part number. I believe it must be a supplier issue. I have a couple of stock 360 and 401 pistons with some dents in the tops. It's usually the 502 heads with the exhaust valve rotator, but I cannot definitively state the valve stem extension or rotator was or was not the problem. Just took apart some 291C heads and someone did a fancy valve job with only 1/16" (or less) exhaust valve contact area. That contact area is for cooling the valve and should be 3/32". There is were I see valves failing more often.

Yes, as many on the forum agree, CHOICE is limited... Going the LS route seems to be my option...
