I have a 1973 CJ5 Super Jeep that has a non-metallic blue engine.  I believe it was a June 1973 build date but not 100% sure of the month.  I am 100% sure of the build year, and it's the 67,516 Jeep build in 1973.

There are tags with dates on differential covers, tranny, t-case, but I think those would be inaccurate estimators of vehicle build date.  They would at least bound the latest month, but not necessarily the earliest month.  I'm assuming the tags were applied to the sub-assemblies when the sub-assemblies were build, not when the vehicle was built.  But seems unlikely that the dates could be separated by more than a month, maybe two?  More likely the sub-assemblies were built within a few weeks.  Inventory is expensive.

I guess Jeeps used the late 70 on up to early 73 AMC engine paint color until 78 or 79?

Or are you questioning date codes?

The engine date code can be fairly accurate since most engines are built with In days before body.

Then again jeep sub assemblys could delayed during body build.

Where would one find the build date on an engine?

On the engine tag at the passenger side valve cover. It is on the front small side facing the radiator.

71 starts with a 4, and each year after is incremented accordingly. So 73 would start with a 6.

Funny thing is a 73 engine can also have a 5, being built between 08/72 to 12/72 for the 73 model build year.

I have a feeling you have an early build 73 model year engine, which should be verified with a 5 starting number on the engine tag.
