Your not going to gain enough compression by using a thin head gasket to bother spending the extra money it will cost to buy them. If you want a race engine your going to need a lot more than thin gaskets. Like I have said before, spend a few months and read more threads on the board.

Flat top pistons are the go if you want compression out of a 360.
PS: no need to post in two places, you will get the same answers from the same people.
