Yes it will but you might need to run a spacer on it. The Eddy carbs tend to have a problem with absorbing heat and boil fuel. The Torker has a different design but I had a slight issue with fuel boiling on my Performer with AVS 2 carb until I added a spacer. But yes... The Eddy 600cfm should work fine with a Torker on a 360.
You might also consider getting a tuning kit. Very rarely does a carb run perfectly out of the box. My 500cfm on my 304 needed to have the metering rods replaced and be re-jetted before it would even drive right.
