The spring on the backside of the pedal doesn't usually just jump off. One of the ears must have finally snapped off.

Ok, so a '68 came with a full length, floor mounted pedal. There should be an approximately 3" bracket welded to the floor. The base of the pedal attaches to that with a little wire hoop. The top of the pedal contacts or attaches to the linkage that goes through the firewall to the carb. (69 is the year the 'suspended' pedal started to be used.)
